Tomorrow, February 27, from 3 until 5 p.m., Paula offers her Hands-On Cheesemaking Class, teaching you to make fresh mozzarella and ricotta. You’ll get the factory tour then launch into the work, learning how mozzarella varieties are formed. Your class wraps up with a wine-and-cheese tasting you won’t forget. Afterward, you’re seated at a long table with lots of cheeses, which will be paired with at least six artisanal beers. Paula and beer experts will take you through a discussion of the combinations of flavors. It’s $50 per person.
